Port the numbers. Paperwork rather than engineering, and it runs in the background while everything else is configured. Your existing lines keep working until the switch completes.

Cut over outside working hours. Handsets arrive pre-configured; the change itself is usually an evening.

Who it does not suit

Two cases, said plainly. A business whose internet is genuinely poor and cannot be improved will get poor calls, and no provider can fix that from their end. And a business with a sound TDM PBX it intends to keep for years may be better served by PRI over the same network for now.
